Buffalo Cauliflower Bites

From the Kitchen of Dr. Bonnie Brock, NMD, MPH, RD

Cruciferous vegetables are some of the most powerful foods for breast health and breast cancer prevention, thanks to their rich content of phytochemicals, antioxidants, and hormone-balancing compounds. Cruciferous vegetables include broccoli, kale, cauliflower, Brussels sprouts, cabbage, collard greens and others. This recipe uses cauliflower to recreate a popular game-day snack (buffalo wings), without the fat and with cancer-fighting compounds. Its a win-win!

Ingredients

·        1 head cauliflower

·        ½ cup flour (regular, almond or gluten-free mix)

·        ½ cup water

·        ½ cup hot sauce

·        ½ tsp garlic powder

·        2 Tbsp coconut oil, melted

·        Pepper to taste

Instructions:

1.        Pre-heat oven or air-fryer to 425 degrees

2.        Add all ingredients except cauliflower to mixing bowl and stir to consistency of cake batter to make Buffalo mix.

3.        Chop cauliflower into bite-size pieces and coat each with the Buffalo mix. Place battered pieces onto baking sheet, evenly spaced.

4.        Bake for 10 mins, flip each piece, and bake for an additional 10 mins. Finish for 3-5 mins on low broil until lightly browned or crispy to the touch.
