Chickpea Bowls

From the Kitchen of Dr. Bonnie Brock, NMD, RD, MPH

Sweet potatoes contain both soluble and insoluble fiber which support digestive health. They are also loaded with beta-carotene, an antioxidant which can be converted to vitamin A in the body, playing an essential role in supporting gut-based immunity. Eat them roasted in this wholesome bowl recipe, loaded with vegetables and chickpeas, which also provide extra prebiotic fiber to help beneficial bacteria thrive.

Ingredients

·        1 ½ cups cooked garbanzo beans (1 can)

·        2 cups fresh arugula

·        1 cup roasted sweet potato, chopped

·        1 cup artichoke hearts, chopped

·        ½ cup feta

·        ½ cup raisins

·        ½ cup olive oil

·        2 Tbsp fresh lemon juice

·        Zest of 1 lemon

·         2 tsp maple syrup

·        ¼ tsp chili flakes

·        Salt and pepper to taste

Instructions:

  1. Place arugula, garbanzo beans, sweet potato, artichoke hearts, and  feta in a large bowl and toss.
  2. Place all other ingredients in mason jar and shake
  3. Drizzle dressing on salad and serve
