Cranberry Gingerbread Bars

From the Kitchen of Dr. Bonnie Brock, NMD, RD, MPH

Ingredients
¼ cup ground flax
¾ cup water
¼ cup melted coconut oil
3/4 cup almond butter
3 Tbsp maple syrup
¼ cup blackstrap molasses
2 cups rolled oats
3 tsp grated ginger
2 tsp ground cinnamon
½ tsp ground cloves
½ tsp ground nutmeg
½ tsp baking soda
½ tsp baking powder
½ tsp salt
1 cup dried cranberries
1 ½ cups chopped walnuts

Instructions:
1. Preheat oven to 350 degrees and line 9×13 pan with parchment
2. Whisk ground flax into water in small bowl and set aside for 15 mins.
3. Add all wet ingredients plus “flax egg” to large bowl and whisk until smooth.
4. Add remaining ingredients and fold until well-combined
5. Bake on the center rack for 22-28 mins, until golden brown.
6. Allow to cool and slice into 12 or 16 squares. Can be frozen individually.

Longevity Promoting Foods:
Blackstrap molasses – Blackstrap molasses is the dark, slightly salty and mineral-packed thick liquid left after multiple boilings of sugarcane (the first and second boilings create cane syrup and molasses). Just 1 Tbsp of blackstrap molasses contain about 20% of the iron you need each day, in addition to calcium, magnesium, potassium and phosphorus, all important minerals.
Walnuts – In addition to being a good source of essential fats, walnuts are rich in vitamin E, which studies have shown to help keep skin hydrated and supple, protected from sun damage, and may even help with hallmarks of premature aging, such as the formation of fine lines.
Cranberries – Any dark red/purple/blue fruit are an excellent source of a phytonutrient called anthocyanin. This powerful antioxidant is thought to support the health and quality of the many “linings” in the body including keeping the lining of the blood vessels in the brain flexible and flowing and the gut lining intact and fortified.
